- 250g/9oz Butter softened
- 100g/4oz Castor Sugar
- 1 tbsp freshly ground Cardamom
- 1 Egg Yolk
- A pinch of Salt
- 2 tsp Vanilla Extract
- 250g/9oz Plain Flour
Preheat the oven to 180C, 350F, gas Mark 4 and line 2 or 3 baking trays with parchment paper. In a large mixing bowl, cream together the butter, sugar, and cardamom.
Add the egg yolk, salt and vanilla extract and beat well with a wooden spoon.
Add the flour and continue to beat until well blended.
Form the mixture into small balls then place them on the baking trays spaced well apart as they will spread. Slightly flatten each one with the palm of your hand then bake for 15-18 minutes until golden brown.
When cooked, cool on wire trays.
